I want to nominate Adi Gallia, Shaak Ti, Depa Billaba, and Stass Allie. They all have brief cameos in the prequels, but also appear in the Clone Wars TV series (and Adi especially has a much larger role), and the majority of material about them would come under Legends (but the fandom would be Legends - AMT, which I'm not sure is allowed).
